WHAT'S WRONG WITH YOU PEOPLE? DELAWARE NORTH? BIG DEAL!

Dear Editor: What's wrong with you people? If Delaware North Companies has such a bad human resources department, then why and how could you write about them as the best company in the United States? You are nuts! You don't make sense to me. You judge  a company from its executive officers and its human resources... Now, if the folks there are screwing up big time at the human resources, this makes me believe that they have the worst employees...And something else, why are you protecting them? You mentioned a Slavic employee who is making all the decisions for Delaware but you are so reluctant to give us her name? What is the deal here? Delaware North, big deal! Ernesto Montalban

 ADAMS MARK HOTELS' HUMAN RESOURCES DEPARTMENT 

Dear Sir/Madam: Human resources departments have always been a major problem for all kinds of companies. The hospitality industry is one of those sectors who constantly suffer lack of efficiency in hiring qualified employees. I have 15 years of experience in managing restaurants in large resorts and luxury hotels. During my long career as a general manager, I was tempted to apply for better jobs with a better pay. I applied to a bunch of hotels and Adams Mark Hotels chain was one of those hotels I contacted personally. You wrote about the Delaware North company human resources department as inadequate and dysfunctional . Well, the worst yet to come is Adams Mark hotels HR department in Missouri.

 

So many red tapes, bureaucracy and unqualified directors and managers at their Missouri headquarters. You know what, you should investigate how they hire and fire employees. You will have something to sink your teeth in. They are terrible. This is why nobody stays on the job there. Ricardo. C (A certified chef and hospitality GM)

LIVE MUSIC IN RESTAURANTS: BAD IDEA?!

Dear Editor: With  much interest, I read your article on live entertainment and how it affects the hospitality and food business. I fully agree with you. Myself, once upon a time owned a small restaurant that offered a sort of a piano music entertainment. I had a woman singer who played the piano and was accompanied by a bass and a drummer. The music did not help my business. I closed my restaurant and started to search for employment. Sorry, I must tell you that I am from a Moroccan origin. I speak French, English and Arabic and I am now a United States citizen. Okay, as I said before, I started to look for a job. I went to Washington, DC, because it is the capital of the United States. This was in 1985. Long time ago. I worked at the French restaurant "La Nicoise". We had fantastic menu. La Nicoise had a very funny show and musical numbers performed by French and American singers and dancers. It was great. Once the show became famous, people will come late to see the show not to eat. We lost the food business. La Nicoise restaurant closed down. A cousin of mine from Casa Blanca found a job at Place Vendome restaurant in Washington DC,. It was a very good restaurant. Rich people used to go there. The owner of the Vendome restaurant decided to have live entertainment in his restaurant. I think it was a bad idea. He brought a musician who played the Oud and a belly dancer. So what happened is this, people will come to drink and dance, instead of eating food. The Vendome lost the food business and became a bar. Eventually, the Vendome restaurant closed down. Your boss, the editor of your magazine knows this. He lived in Washington. He was the boss of Le Marquis de Rochambeau, a five star restaurant. When the Rochambeau started to advertise as a French cabaret with live music, people start to go there late to see the show. The food business went down but the drink sale went up. But not enough to cover the expenses, employees salaries and rent. the Rochambeau like the Vendome and La Nicoise closed down.

 

 
 

 My advice to everybody is not to mix apples and oranges and restaurant food business with live entertainment business. Live music hurts very bad the food business of restaurants. Kamal  Bakri.
